Coming Up Next
OK, so, I have a confession to make: I have no life. That being the case I spend a lot of my time on the internet in general and on Pinterest specifically. And right now I have no food (there are so many things that are bad about binge eating; one of them is what it can do to your finances) so I spend a lot of time looking for recipes (and so looking at pictures of food I cannot eat, lol). I am very excited about a lot of them and I know the next two that I will be trying. Thought I might share the pics with you (I have not yet played with the recipes themselves so will not be posting that info until later).
This is James Duigan's (who, by the way, I have never heard of before, lol) Ultimate Clean & Lean Lettuce Wrap. I plan on using Romaine lettuce and not the iceberg lettuce that is pictured (it's actually better for you) but anyway it looks great and I cannot wait to try it (could have something to do with the fact that I'm just a little hungry, lol).
I'm SO excited about these. I LOVE Greek yogurt. I'll substitute it for anything that I can. It's a great way to make a recipe just that much lower in calories. And who doesn't love pancakes?
It's almost May, right? lol

Baked Cauliflower Poppers
From Delighted Momma (found on Pinterest, of course) come Baked Cauliflower Poppers.
I cut the recipe in half
What I used:
- 1 heads of cauliflower
- 1/8 cup of canola oil (my budget couldn't handle the olive oil she used)
- 3/4 teaspoon of salt
- 1/2 teaspoon of pepper
Directions:
- Preheat oven to 400 degrees
- Wash and clean the cauliflower. Cut off and discard the stem. Cut the cauliflower up into small pieces.
- In a large bowl, combine the olive oil, salt and pepper. Add the cauliflower pieces and thoroughly coat each piece.
- Place cauliflower pieces onto a baking sheet lined with parchment paper. Bake for one hour and turn 3 times during cooking until each piece has a nice brown coloring. The browner they are the better.
- Remove from oven and enjoy!
As I write this mine are still in the oven so I will have to let you know later how they turned out. A little more work than I like to put into prep though, honestly. Though this blog may cause you to believe differently I do not actually like to cook, lol. So the less prep the better. I believe my exact response to 'turn 3 times during cooking' was 'turn 3 times my @$$' lol. Also I don't have any parchment paper so I'm hoping there's enough oil on them to keep them from sticking to the pan >.<
Let's see, calorie break down.
1 medium head of cauliflower: 144
1/8 cup Canola oil: 230
0 calories for the salt and pepper
Total calories: 374
For dipping I made a Ranch dip with fat free Greek yogurt (5.30 oz, Dannon Oikos) and a Hidden Valley Ranch packet
Yogurt: 80
Ranch Packet: 0
So, the poppers themselves are 374 calories (I am currently telling myself that 'It's OK, it's OK, it's OK' >.< ) And the dip is 80 calories but I very much doubt you will use it all. Also, a tip... if you make this dip I'd probably use just half of the ranch packet, lol. Oops.
So, 374 calories for a snack... well if we're sticking to the bare minimum of 1200 calories we've actually probably just eaten a meal rather than a snack, calorie wise (though remember, of the 144 calories in that cauliflower only 5 of them are from fat). But remember that's the bare minimum number of calories for a day. If we go with the average 2000 for an adult female then we're still OK. Just remember... 'It's OK, it's OK, it's OK'
I'll let you know how they turn out :)

Ohmygosh I love these!!! Plain or with the ranch dip, mmmmmm! I think they were worth the clean up and turning three times, lol
Recipes to come
Here are some recipes (courtesy, once again, of Pinterest) I am hoping to try in the future. Rather, here are some pictures of the results, lol. I've already tweeked the first one and just cannot wait to try it... well, the part of me that loves food cannot wait. The ED part of me is mostly what is holding me off... that and lack of funds, heh.

Phew, lol. This more than likely will not be the order in which I will be trying these, just so you know.

Avacado Quesadillas
I found this recipe on Pinterest (a site I am very quickly becoming addicted to, lol). You can find it on the blog 'Big Girls Small Kitchen'
Ingredients
1/2 avocado
1 teaspoon lemon or lime juice
1/8 teaspoon salt
*1 teaspoon butter
1 tortilla
1/4 cup grated white cheddar
Mash the avocado with the lemon or lime juice and the salt.
Melt the butter in a small saucepan over medium heat. Lay the tortilla down and sprinkle the cheddar across the surface. Cook until the cheese is melted and the bottom of the tortilla is deeply golden. Quickly spread the avocado mixture across one half of the tortilla. Turn off the heat and fold the tortilla in half, pressing down so the melted cheese glues it together.
Cut into wedges and serve immediately.
Serves one

*I used cooking spray (no calories) instead of butter on my frying pan.
What I used:
1 Medium 96% Fat Free Tortilla: 130 calories
½ avocado (½ cup): 120 calories
1 oz Kerrygold Reduced Fat Aged Cheddar: 70 calories
1 teaspoon lime juice: approx. 1 calorie
Total calories: 321
Now I’ll admit, 321 calories practically has me choking on my quesadilla but you have to remember that an adult, on average, should have a bare minimum of 1200 calories a day (the recommended for a woman is 2000; for a man, 2500). Three meals a day, that’s 400 calories per meal, at least.
As to how it turned out… not bad actually. Next time I make it I might just leave out the lime juice. Also, since I used a medium sized tortilla I could probably have used a bit less avocado (maybe a ¼ cup, which would have gotten me down to 60 calories for the avocado -oh, there’s the eating disorder-NOS coming out-).
Now if you will excuse me, it’s time to go for a run
