Ingredients
1/2 avocado
1 teaspoon lemon or lime juice
1/8 teaspoon salt
*1 teaspoon butter
1 tortilla
1/4 cup grated white cheddar
Mash the avocado with the lemon or lime juice and the salt.
Melt the butter in a small saucepan over medium heat. Lay the tortilla down and sprinkle the cheddar across the surface. Cook until the cheese is melted and the bottom of the tortilla is deeply golden. Quickly spread the avocado mixture across one half of the tortilla. Turn off the heat and fold the tortilla in half, pressing down so the melted cheese glues it together.
Cut into wedges and serve immediately.
Serves one

*I used cooking spray (no calories) instead of butter on my frying pan.
What I used:
1 Medium 96% Fat Free Tortilla: 130 calories
½ avocado (½ cup): 120 calories
1 oz Kerrygold Reduced Fat Aged Cheddar: 70 calories
1 teaspoon lime juice: approx. 1 calorie
Total calories: 321
Now I’ll admit, 321 calories practically has me choking on my quesadilla but you have to remember that an adult, on average, should have a bare minimum of 1200 calories a day (the recommended for a woman is 2000; for a man, 2500). Three meals a day, that’s 400 calories per meal, at least.
As to how it turned out… not bad actually. Next time I make it I might just leave out the lime juice. Also, since I used a medium sized tortilla I could probably have used a bit less avocado (maybe a ¼ cup, which would have gotten me down to 60 calories for the avocado -oh, there’s the eating disorder-NOS coming out-).
Now if you will excuse me, it’s time to go for a run
